Why Polished Concrete and Not A Coating ?

The number one cause of failure of coating is hydrostatic pressure.  Hydrostatic pressure will build up under the coating and pop because the concrete cannot breath.  This means that the life of the finish of many coated floors can often be measured in a few years, requiring the owner to spend thousands of dollars annually on maintenance. 
Polished concrete on the other hand, can breathe, allowing moisture vapor to escape while not allowing salts or efflorescence to form. In other words, Polishing concrete improves the overall quality of the floor.
